S’mores Rice Krispie Treats

Description

A delicious twist on the classic campfire treat, combining marshmallows, Rice Krispies, chocolate, and graham crackers.


Ingredients

  • 6 cups Rice cereal
  • 4 cups mini marshmallows (or 1 bag, about 10 oz)
  • 1/2 cup butter (1 stick)
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking. Set aside.
  2. In a large saucepan over low heat, melt the butter. Once melted, add the mini marshmallows and stir continuously until they are completely melted and smooth.
  3. Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt (if using). Mix well to combine.
  4. Gradually add the Rice Krispies cereal to the melted marshmallow mixture. Stir gently but thoroughly until all the cereal is evenly coated.
  5. Fold in the graham cracker crumbs and half of the chocolate chips (reserve the other half for topping). Mix until well combined.
  6. Pour the mixture into the prepared baking dish. Using a spatula or your hands (lightly greased), press the mixture down firmly and evenly into the pan.
  7. Sprinkle the remaining chocolate chips over the top of the pressed mixture, gently pressing them in to ensure they stick.
  8. Allow the treats to cool at room temperature for about 30 minutes or until set. For quicker cooling, you can place them in the refrigerator for about 15 minutes.
  9. Once set, cut the treats into squares or rectangles. Serve immediately or store in an airtight container for up to a week.
