Description

Snowball Donuts are light, fluffy baked donuts coated generously with powdered sugar, creating a sweet, snowball-like appearance. Made with simple ingredients and a buttermilk-style batter, these donuts are perfect for a delightful breakfast or snack.

Ingredients

Scale
  • 2/3 cup milk of choice – your preferred dairy or non-dairy option
  • 1 1/2 tsp white or cider vinegar – to create a buttermilk effect
  • 2 1/2 tbsp oil – or substitute with mashed banana, applesauce, or almond butter for an oil-free version
  • 1 tsp pure vanilla extract – for flavor
  • 1 cup spelt, white, or oat flour – regular flour or any gluten-free substitute can work
  • 1 1/2 tsp baking powder – for leavening
  • 1/2 cup sugar
  • 1/4 tsp salt – to enhance flavors
  • Powdered sugar – for dusting; can use sugar-free powdered sugar

Instructions

  1. Whisk the Wet Ingredients: In a small bowl, whisk together milk, vinegar, oil (or chosen substitute), and vanilla extract. Let sit for a few minutes to thicken.
  2. Preheat the Oven and Prepare the Pan: Preheat oven to 350°F (175°C). Grease a mini or regular donut pan or mini muffin tin.
  3. Combine Dry Ingredients: In a large bowl, sift together flour, baking powder, sugar, and salt. Mix well.
  4. Mix the Wet and Dry Ingredients: Pour wet mixture into dry ingredients and gently stir until just combined. Avoid overmixing.
  5. Fill the Pan and Bake: Pour batter into prepared pan, filling cavities about 3/4 full. Bake for 8 minutes or until toothpick comes out clean. Cool completely in the pan.
  6. Dust with Powdered Sugar: Dip or sprinkle cooled donuts with powdered sugar for a snowball effect. Serve fresh.

Notes

  • Milk: Coconut or almond milk can be used for a dairy-free version.
  • Vinegar: Lemon juice works as an acidity substitute.
  • Flour: Gluten-free or almond flour can replace oat or spelt flour.
  • Sugar: Stevia, honey, or maple syrup are healthier sweetener alternatives.
  • Oil: Applesauce or mashed banana are great oil-free substitutes that add moisture and sweetness.
  • Donuts should cool completely before dusting to prevent melting the sugar coating.
