Description
Soft Amaretti cookies are tender, chewy almond-flavored Italian treats with a lightly crisp exterior, perfect for festive occasions or a delightful everyday indulgence.
Ingredients
Scale
- 2 cups Almond Flour
- 1 cup Granulated Sugar
- 2 large Egg Whites
- 1 teaspoon Almond Extract
- Powdered Sugar – for dusting
- A pinch of Salt (optional)
- 1 tablespoon Amaretto Liqueur (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, combine almond flour, granulated sugar, and a pinch of salt. Mix well to eliminate clumps.
- In a separate bowl, whisk egg whites until soft peaks form (2–3 minutes with a mixer or 5–6 minutes by hand).
- Fold in almond extract and amaretto liqueur, if using, into the egg whites.
- Gently fold the egg white mixture into the dry ingredients until just combined. Let the dough rest for 10–15 minutes.
- Form 1-inch balls of dough using a scoop or spoons. Place on baking sheets 2 inches apart and dust with powdered sugar.
- Bake for 12–15 minutes until edges are golden and centers are soft. Cool on the sheet for a few minutes, then transfer to a wire rack.
Notes
- Resting the dough helps enhance flavor and texture.
- Aquafaba can replace egg whites for a vegan version (3 tbsp per egg white).
- Use oat or sunflower seed flour for a nut-free alternative, though flavor will vary.
- Coconut sugar may alter the cookies’ color and texture.
- For a different twist, substitute almond extract with vanilla or hazelnut extract.
