- 4 cups all-purpose flour (plus extra for dusting)
- 1 ½ cups warm water (about 110°F or 43°C)
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 tablespoon brown sugar
- 1 teaspoon salt (for the dough)
- ⅔ cup baking soda (for the boiling solution)
- Coarse sea salt (for sprinkling on top)
Instructions
- Activate the yeast by combining warm water, brown sugar, and active dry yeast in a small bowl. Let it sit for 5-10 minutes until frothy.
- Prepare the dough by mixing all-purpose flour and salt in a large bowl, then add the yeast mixture and stir until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Let the dough rise in a greased bowl covered with a towel for about 1 hour, or until doubled in size.
- Shape the pretzel bites by punching down the dough, dividing it into 8 pieces, rolling each into a rope, and cutting into 1-inch pieces.
- Boil the pretzel bites in a large pot of boiling water with baking soda for 30 seconds, then remove with a slotted spoon.
- Sprinkle the tops of the pretzel bites with coarse sea salt.
- Bake in a preheated oven at 450°F (232°C) for 12-15 minutes until golden brown.
- Cool slightly before serving warm with dips.
Notes
- Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for longer storage.
- Reheat in the oven at 350°F (175°C) for 5-10 minutes.
- For freezing, place in a freezer-safe bag for up to 3 months.
