- 1 package (about 8.5 oz) cornbread mix
- 6 large eggs
- 1 cup milk (whole or 2%)
- 1 cup shredded cheddar cheese
- 1 cup cooked sausage, crumbled (breakfast sausage works well)
- 1 cup diced bell peppers (any color)
- 1/2 cup chopped green onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Optional: hot sauce to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the cornbread mix according to the package instructions and set aside.
- Cook the crumbled sausage in a skillet over medium heat until browned, about 5-7 minutes. Drain excess grease.
- Sauté the diced bell peppers in the same skillet for about 3-4 minutes until slightly softened.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.
- Add the cooked sausage, sautéed bell peppers, shredded cheddar cheese, and chopped green onions to the egg mixture and stir until evenly distributed.
- Pour half of the cornbread batter into a greased baking dish, then pour the egg mixture over it, followed by the remaining cornbread batter.
- Bake for 35-40 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the casserole cool for about 10 minutes before slicing and serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, microwave or bake until warmed through.
- For freezing, wrap tightly in plastic wrap and aluminum foil; can be frozen for up to three months.
