Description

A delightful Southern Cornbread Casserole for Breakfast that combines comforting flavors of cornbread with savory ingredients, perfect for brunch or family breakfast.


Ingredients

  • 1 package (about 8.5 oz) cornbread mix
  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 1 cup cooked sausage, crumbled (breakfast sausage works well)
  • 1 cup diced bell peppers (any color)
  • 1/2 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Optional: hot sauce to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the cornbread mix according to the package instructions and set aside.
  3. Cook the crumbled sausage in a skillet over medium heat until browned, about 5-7 minutes. Drain excess grease.
  4. Sauté the diced bell peppers in the same skillet for about 3-4 minutes until slightly softened.
  5. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.
  6. Add the cooked sausage, sautéed bell peppers, shredded cheddar cheese, and chopped green onions to the egg mixture and stir until evenly distributed.
  7. Pour half of the cornbread batter into a greased baking dish, then pour the egg mixture over it, followed by the remaining cornbread batter.
  8. Bake for 35-40 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Let the casserole cool for about 10 minutes before slicing and serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • To reheat, microwave or bake until warmed through.
  • For freezing, wrap tightly in plastic wrap and aluminum foil; can be frozen for up to three months.
