  • 1 cup stone-ground corn grits
  • 4 cups water or chicken broth
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 green onions, chopped (plus extra for garnish)
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: hot sauce for serving

Instructions

  1. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Gradually whisk in the stone-ground corn grits. Reduce heat and simmer for about 20-25 minutes, stirring frequently until creamy. Add salt and pepper to taste.
  2. While the grits are cooking, heat a large skillet over medium-high heat. Add the butter and let it melt. Once the butter is bubbling, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the peeled and deveined shrimp to the skillet. Season with smoked paprika, salt, and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and opaque, and have a nice caramelized color. Be careful not to overcook them.
  4. Once the shrimp are cooked, remove the skillet from the heat and drizzle the lemon juice over the shrimp. Toss to combine.
  5. To serve, spoon a generous portion of the creamy grits into a bowl. Top with the caramelized shrimp and any remaining sauce from the skillet. Garnish with chopped green onions for a fresh touch.
