Description

Southern Sweet Tea Pound Cake Bites are delightful treats that combine the rich, buttery taste of pound cake with refreshing sweet tea, perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 cup brewed sweet tea, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini muffin pan or square baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the cooled sweet tea. Start and end with the flour mixture. Mix until just combined. Stir in the vanilla extract.
  6. Pour the batter into the prepared muffin pan, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes for mini bites or 30-35 minutes for a larger cake, or until a toothpick inserted into the center comes out clean.
  8. Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, dust the pound cake bites with powdered sugar for a sweet finish.
  10. Arrange the cake bites on a rustic wooden platter. Garnish with fresh mint sprigs and a hint of lemon zest for added color and flavor. Enjoy!

Notes

  • For a dairy-free version, use vegan butter and a plant-based milk instead of sweet tea.
  • To make it gluten-free, substitute all-purpose flour with a gluten-free flour blend.
  • For a lower sugar option, consider using a sugar substitute that measures like sugar.
  • Add a splash of bourbon for an adult twist on the flavor!
