  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 cup tortilla strips (store-bought or homemade)

Instructions

  1. Prepare the chicken by grilling it over medium-high heat for about 6-7 minutes per side until fully cooked, then dice.
  2. In a large mixing bowl, combine the chopped romaine lettuce, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
