Description

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 cup walnuts, chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or dried fruit for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add honey and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, combine rolled oats, chopped walnuts, cinnamon, nutmeg, and salt. Add chocolate chips or dried fruit if using.
  5. Gradually add the dry ingredients to the banana mixture, stirring until well incorporated.
  6. Pour the mixture into a prepared baking dish and spread it evenly, pressing it down firmly.
  7. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into bars.
