- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1 cup walnuts, chopped
- 1 teaspoon cinnamon

- 1/4 cup honey
- 1 teaspoon vanilla extract

- Optional: 1/2 cup chocolate chips or dried fruit for added flavor
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add honey and vanilla extract to the mashed bananas and mix well.
- In a separate bowl, combine rolled oats, chopped walnuts, cinnamon, nutmeg, and salt. Add chocolate chips or dried fruit if using.
- Gradually add the dry ingredients to the banana mixture, stirring until well incorporated.
- Pour the mixture into a prepared baking dish and spread it evenly, pressing it down firmly.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into bars.
