- 1 cup grated carrots (about 2 medium carrots)
- 1 cup cashew nuts, finely chopped
- 1 ½ cups all-purpose flour
- 1 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 4 oz cream cheese, softened
- ½ cup powdered sugar (for the filling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy.
- Mix in the grated carrots and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this to the wet mixture.
- Fold in the chopped cashew nuts until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack.
- Beat the softened cream cheese with the powdered sugar until smooth for the filling.
- Spread the cream cheese filling on the flat side of one cookie and top with another cookie to form a sandwich.
