Ingredients

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup cashew nuts, finely chopped
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • ½ cup powdered sugar (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Mix in the grated carrots and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this to the wet mixture.
  5. Fold in the chopped cashew nuts until evenly distributed.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack.
  9. Beat the softened cream cheese with the powdered sugar until smooth for the filling.
  10. Spread the cream cheese filling on the flat side of one cookie and top with another cookie to form a sandwich.
