- 1 pound boneless, skinless chicken breasts
- 2 ripe peaches, pitted and diced
- 1 cup spicy BBQ sauce
- 8 small corn tortillas
- 1 cup red cabbage, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 2 tablespoons lime juice (freshly squeezed)
- 1–2 jalapeños, sliced (adjust based on heat preference)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked. Remove and let rest before slicing.
- In the same skillet, add diced peaches and cook for 3-4 minutes. Add spicy BBQ sauce and simmer for 5 minutes.
- Slice the cooked chicken and add it to the skillet with the peach BBQ sauce, stirring to coat. Cook for another 2-3 minutes.
- Warm the corn tortillas in a separate skillet for about 30 seconds on each side.
- Assemble the tacos by adding the peach BBQ chicken mixture to each tortilla and topping with red cabbage, cilantro, jalapeños, and lime juice.

- For gluten-free, use corn tortillas.
- For vegetarian, substitute chicken with tofu or jackfruit.
- For milder flavor, reduce jalapeños or use sweet BBQ sauce.
