Spicy Pineapple Chicken Wraps are a delightful blend of flavors that combine the sweetness of pineapple with the heat of spices, making them perfect for casual gatherings or quick weeknight dinners.

Ingredients

Scale
  • 500 grams ground chicken
  • 1 cup fresh pineapple, diced
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 green onions, chopped (white and green parts separated)
  • 1 tablespoon sesame oil
  • 1 head of butter or iceberg lettuce (for wrapping)
  • 1 teaspoon red pepper flakes (optional, for added spice)
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by dicing the fresh pineapple, mincing the garlic and ginger, and chopping the green onions.
  2. In a large skillet, heat the olive oil over medium heat, add the ground chicken, and season with salt and pepper. Cook for 5-7 minutes until fully cooked.
  3. Add the minced garlic, ginger, and the white parts of the green onions to the skillet and sauté for 2-3 minutes.
  4. Stir in the diced pineapple, soy sauce, sesame oil, and red pepper flakes, cooking for another 3-5 minutes.
  5. Separate the lettuce leaves from the head, rinse, and dry them gently.
  6. Spoon the spicy pineapple chicken mixture into the center of each lettuce leaf and top with the green parts of the chopped green onions.
  7. Serve the filled lettuce wraps on a platter, enjoying them while warm.

Notes

  • For a milder flavor, swap soy sauce with coconut aminos.
  • Store leftovers in an airtight container in the refrigerator for up to two days.
  • For freezing, wrap each individual wrap in plastic wrap and place in a freezer bag for up to a month.
