  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made pie crust in a pie dish and prick the bottom with a fork.
  3. In a skillet, heat the olive oil over medium heat, add the diced onion and minced garlic, and sauté until the onion is translucent.
  4. Add the chopped spinach and cook until wilted, then remove from heat and let it cool slightly.
  5. In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper. Stir in the sautéed spinach mixture and shredded cheese.
  6. Pour the spinach and egg mixture into the prepared pie crust.
  7. Bake for 35-40 minutes, or until the filling is set and the top is golden brown.
