Description

A hearty and satisfying dish combining steak, creamy queso, and fluffy rice, perfect for family dinners or gatherings.


Ingredients

  • 1 lb (450 g) steak (sirloin or flank steak recommended)
  • 1 cup (200 g) cooked rice (white or brown)
  • 1 cup (240 ml) queso cheese (store-bought or homemade)
  • 1 bell pepper (any color), diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 can (15 oz or 425 g) black beans, drained and rinsed
  • 1/4 cup (15 g) fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the steak with salt, pepper, and ground cumin. Let it sit for about 15 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side. Remove and let it rest before slicing.
  3. Add the remaining tablespoon of olive oil to the skillet. Sauté the diced onion and bell pepper for about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Add the cooked rice and black beans to the skillet. Stir well and heat through for about 2-3 minutes.
  5. Reduce heat to low and pour the queso cheese over the mixture. Stir until melted and evenly coats the rice and beans.
  6. Gently fold in the sliced steak and cook for an additional 1-2 minutes until heated through.
  7. Remove from heat and garnish with fresh cilantro. Serve warm.

Notes

  • For a lighter version, use brown rice or cauliflower rice.
  • For a vegan option, substitute steak with grilled vegetables and use a dairy-free queso sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat with a splash of beef broth to keep the rice moist.
