- 1 lb (450 g) steak (sirloin or flank steak recommended)
- 1 cup (200 g) cooked rice (white or brown)
- 1 cup (240 ml) queso cheese (store-bought or homemade)
- 1 bell pepper (any color), diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 can (15 oz or 425 g) black beans, drained and rinsed
- 1/4 cup (15 g) fresh cilantro, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Season the steak with salt, pepper, and ground cumin. Let it sit for about 15 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side. Remove and let it rest before slicing.
- Add the remaining tablespoon of olive oil to the skillet. Sauté the diced onion and bell pepper for about 3-4 minutes. Add minced garlic and cook for an additional minute.
- Add the cooked rice and black beans to the skillet. Stir well and heat through for about 2-3 minutes.
- Reduce heat to low and pour the queso cheese over the mixture. Stir until melted and evenly coats the rice and beans.
- Gently fold in the sliced steak and cook for an additional 1-2 minutes until heated through.
- Remove from heat and garnish with fresh cilantro. Serve warm.
Notes
- For a lighter version, use brown rice or cauliflower rice.
- For a vegan option, substitute steak with grilled vegetables and use a dairy-free queso sauce.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat with a splash of beef broth to keep the rice moist.
