- 1 kg (about 2.2 lbs) chicken thighs, bone-in and skin-on
- 1/2 cup (120 ml) honey
- 4 cloves garlic, minced
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons (30 ml) sesame oil
- 2 tablespoons (30 ml) rice vinegar
- 2 tablespoons toasted sesame seeds
- 3 green onions, sliced (for garnish)
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Prepare the marinade by combining honey, minced garlic, soy sauce, sesame oil, rice vinegar, salt, and pepper in a mixing bowl.
- Marinate the chicken by placing it in a resealable plastic bag or shallow dish, pouring the marinade over it, and refrigerating for at least 30 minutes.
- Preheat the oven to 200°C (400°F).
- Sear the chicken in a large oven-safe skillet with olive oil over medium-high heat for about 5-7 minutes until golden brown, then flip and cook for another 3-4 minutes.
- Add the reserved marinade to the skillet and bring to a simmer before transferring it to the oven.
- Bake the chicken for 25-30 minutes or until it reaches an internal temperature of 75°C (165°F), basting halfway through.
- Broil for the last 3-5 minutes for a thicker glaze, watching closely to prevent burning.
- Garnish with toasted sesame seeds and sliced green onions before serving.

- For gluten-free, use tamari instead of soy sauce.
- For lower sugar, consider agave syrup or a sugar-free honey substitute.
- Add red pepper flakes for a spicy kick.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
