Description

A delightful dish that combines sweet and savory flavors with juicy chicken thighs coated in a luscious peach glaze.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 medium fresh peaches, sliced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (optional, for garnish) such as cilantro or basil

Instructions

  1. In a medium bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, olive oil, salt, and black pepper until well combined.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat your oven to 400°F (200°C).
  4. In an oven-safe skillet, heat a little olive oil over medium-high heat. Remove the chicken thighs from the marinade (reserve the marinade) and place them skin-side down in the skillet. Sear for about 5-7 minutes, or until the skin is golden brown and crispy. Flip the chicken thighs and sear the other side for an additional 3-4 minutes.
  5. Add the sliced peaches to the skillet around the chicken. Pour the reserved marinade over the chicken and peaches.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the glaze is sticky and caramelized.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze for up to 3 months for longer storage.
  • Reheat in the oven at 350°F (175°C) until warmed through.
