Ingredients

  • 3 cups fresh strawberries, hulled and sliced
  • 2 large navel oranges, peeled and segmented
  • 1/4 cup fresh mint leaves, chopped (plus extra for garnish)
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons honey or maple syrup (for a vegan option)
  • 1 teaspoon vanilla extract

Instructions

  1. Wash and hull the strawberries, then slice into quarters or halves.
  2. Peel the oranges by cutting off the top and bottom, then slice off the skin and pith. Segment the oranges by cutting between the membranes to release the sections.
  3. In a small bowl, whisk together orange juice, honey or maple syrup, and vanilla extract. Optionally, heat the mixture on low to thicken, then cool.
  4. In a large bowl, gently toss the strawberries and orange segments.
  5. Drizzle the citrus syrup over the fruit and add the chopped mint. Fold carefully to coat all pieces evenly.
  6. Chill the salad in the refrigerator for 30 minutes to an hour to allow flavors to meld.
  7. Before serving, garnish with additional fresh mint leaves.
