Description

Instructions

  1. Preheat oven to 350°F (175°C). Ensure mixing bowl and beaters are clean and fat-free.
  2. In a large bowl, beat egg whites with cream of tartar and salt on medium speed until soft peaks form, about 3–5 minutes.
  3. Gradually add 1 cup of granulated sugar and continue to beat until stiff, glossy peaks form.
  4. In a separate bowl, sift together cake flour and the remaining ½ cup of sugar.
  5. Gently fold the dry ingredients into the whipped egg whites in three additions using a spatula, being careful not to deflate the mixture.
  6. Stir in vanilla and almond extracts gently until just combined.
  7. Pour the batter into an ungreased 10-inch tube pan and smooth the top.
  8. Bake for 30–35 minutes or until the cake is golden and springs back when touched.
  9. Invert the pan immediately and let the cake cool completely upside down.
  10. Once cooled, run a knife around the edges and center to release the cake from the pan.

  • Use aquafaba (3 tbsp per egg white) and a pinch of baking powder for a vegan version.
  • Substitute sugar with erythritol or stevia for a sugar-free alternative.
