- 1 cup heavy cream
- 3/4 cup sugar

- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 large egg
Instructions
- Prepare the Strawberry Basil Ice Cream by blending strawberries, basil, and sugar until smooth. Whisk heavy cream and vanilla, then fold in the strawberry mixture. Churn in an ice cream maker or freeze in a shallow dish, stirring every 30 minutes.
- Make the cookies by preheating the oven to 350°F (175°C). Cream butter and sugar, beat in egg and vanilla. Mix dry ingredients and combine with wet ingredients. Drop dough onto a baking sheet and bake for 10-12 minutes.
- Assemble the ice cream sandwiches by scooping ice cream onto one cookie and topping with another cookie.
- Serve immediately or freeze for 30 minutes to firm up. Optionally, roll edges in crushed strawberries or chopped basil.
