- 2 cups rolled oats
- 2 cups milk (dairy or non-dairy)
- ½ cup Greek yogurt
- 1 egg
- ¼ cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- 1½ cups fresh strawberries, chopped
- ¼ cup cream cheese, softened
- Optional toppings: additional strawberries, whipped cream, graham cracker crumbs
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix chopped strawberries with 1 tablespoon of maple syrup or honey and set aside.
- In a large bowl, combine rolled oats, milk, Greek yogurt, egg, remaining maple syrup, vanilla extract, baking powder, and cinnamon. Stir well.
- Fold the strawberry mixture into the oatmeal mixture.
- Pour half of the oat mixture into a greased 9×9-inch baking dish. Spread softened cream cheese over the layer, then top with the remaining oat mixture.
- Bake for 30–35 minutes, until the top is golden and the center is set.
- Let it cool for a few minutes, then serve warm or chilled with optional toppings.
