Instructions

  1. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
  2. Line a mini muffin tin with paper liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each muffin cup, making sure to pack it tightly.
  3. In a large mixing bowl, combine the softened cream cheese, strawberry yogurt, powdered sugar, and vanilla extract. Use an electric mixer to beat the mixture until it is smooth and creamy, with no lumps.
  4. Spoon the strawberry yogurt filling over the graham cracker crusts in the muffin tin, filling each cup to the top. Smooth the tops with a spatula.
