Description

Strawberry Cheesecake Bars with Graham Cracker Crust are a delightful treat that combines creamy cheesecake with a crunchy, buttery crust and fresh strawberries.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons powdered sugar (for topping)
  • 1 tablespoon lemon juice (optional, for strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture into the bottom of a greased 9×9-inch baking pan and bake for 8-10 minutes.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of granulated sugar and the vanilla extract, mixing until smooth.
  3. Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly.
  4. In a separate bowl, combine the sliced strawberries with 2 tablespoons of powdered sugar and lemon juice. Toss gently and let sit for about 10 minutes.
  5. After the cheesecake layer has set slightly (about 30 minutes in the refrigerator), arrange the sliced strawberries on top.
  6. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until fully set.
  7. Once chilled, cut the bars into squares and serve cold.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • For freezing, wrap tightly in plastic wrap and aluminum foil; they can be frozen for up to three months.
