- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons powdered sugar (for topping)
- 1 tablespoon lemon juice (optional, for strawberries)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture into the bottom of a greased 9×9-inch baking pan and bake for 8-10 minutes.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 cup of granulated sugar and the vanilla extract, mixing until smooth.
- Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly.
- In a separate bowl, combine the sliced strawberries with 2 tablespoons of powdered sugar and lemon juice. Toss gently and let sit for about 10 minutes.
- After the cheesecake layer has set slightly (about 30 minutes in the refrigerator), arrange the sliced strawberries on top.
- Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until fully set.
- Once chilled, cut the bars into squares and serve cold.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- For freezing, wrap tightly in plastic wrap and aluminum foil; they can be frozen for up to three months.
