Description
Strawberry Cheesecake Poke Cake is a moist, flavorful dessert that combines the sweetness of vanilla cake with a creamy cheesecake pudding filling. The technique of poking holes and filling them with luscious pudding creates a delightful texture and flavor fusion, topped with fluffy whipped cream and fresh strawberries for a refreshing finish.
Ingredients
Scale
- 15.25 oz box vanilla cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs (room temperature)
- 7 oz (2 boxes) cheesecake instant pudding mix
- 3 1/2 cups cold whole milk
- 8 oz whipped topping (thawed)
- 1 cup fresh strawberries (washed, hulled, chopped, for garnish)
Instructions
- Preheat oven: Set to 350°F (175°C). Grease a 9×13 baking dish with baking spray.
- Mix cake batter: In a medium bowl, combine cake mix, water, and vegetable oil. Beat on medium for 2 minutes.
- Add eggs & bake: Add eggs one at a time, mixing well after each. Pour batter into pan and bake 25-28 minutes, or until a toothpick comes out clean.
- Poke holes & cool: Let cake cool 10-15 minutes. Use wooden spoon handle to poke holes 1-1.5 inches apart. Cool completely.
- Prepare pudding: Whisk pudding mix with cold milk for 2 minutes until thickened. You can also add sliced strawberries at this point for extra flavor and texture.
- Fill holes: Spoon or pipe pudding into holes and spread remaining on top.
- Chill: Cover with plastic wrap and refrigerate at least 2 hours.
- Add topping: Spread whipped topping over pudding layer. Garnish with chopped strawberries.
- Serve: Slice and keep refrigerated until serving.
Notes
- Ensure cake is fully cooled before filling to prevent pudding melting.
- For extra flavor, add a splash of vanilla or almond extract to pudding mix.
- Store leftovers covered in the refrigerator for up to 3 days.
