  • 1 cup fresh strawberries, diced
  • 1 tbsp lemon juice (optional)
  • 1/4 cup granulated sugar (for coating)
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract together.
  4. Combine the wet and dry ingredients, mixing just until combined. Do not overmix.
  5. Spoon or pipe the batter into the donut pan, filling each cavity halfway.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
  7. To make the cheesecake filling, beat the cream cheese until smooth, then mix in powdered sugar and vanilla extract. Fold in strawberries and lemon juice.
  8. Once the donuts are cooled, use a piping bag with a narrow tip to fill the center of each donut with the cheesecake mixture.
  9. Optional: Mix sugar and cinnamon in a bowl, then roll each donut in the mixture for coating.
