Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract together.
- Combine the wet and dry ingredients, mixing just until combined. Do not overmix.
- Spoon or pipe the batter into the donut pan, filling each cavity halfway.
- Bake for 10-12 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
- To make the cheesecake filling, beat the cream cheese until smooth, then mix in powdered sugar and vanilla extract. Fold in strawberries and lemon juice.
- Once the donuts are cooled, use a piping bag with a narrow tip to fill the center of each donut with the cheesecake mixture.
