- 2 tablespoons chia seeds
- 1 cup fresh strawberries, hulled and chopped
- 1 tablespoon lemon juice
Instructions
- Prepare the Strawberry Chia Jam by cooking chopped strawberries and lemon juice in a saucepan over medium heat for 5-7 minutes.
- Add chia seeds to the mixture and cook for another 2-3 minutes until thickened. Let it cool.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and granulated sugar until light and fluffy.
- Mix in vanilla extract and salt until combined.
- Gradually add all-purpose flour, mixing until just combined.
- Shape the dough into balls and place them on the baking sheet, spaced 2 inches apart.
- Create thumbprints in the center of each cookie.
- Fill each thumbprint with the cooled strawberry chia jam.
- Bake for 12-15 minutes until edges are lightly golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
