Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar.
- In another bowl, mix the egg, buttermilk, vegetable oil, and vanilla extract until well combined.
- Gently pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Fold in the chopped strawberries evenly into the batter.
- In a separate bowl, beat softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth.
- Line or grease a muffin tin. Add a spoonful of batter into each cup, fill about ⅓ full. Add a teaspoon of cream cheese filling, then top with more batter to cover.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
