Ingredients

Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a medium bowl, beat the softened cream cheese with 1/4 cup (50 g) of granulated sugar until smooth and creamy. Set aside.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- In another bowl, beat the eggs with the remaining 1/2 cup (100 g) of granulated sugar and vanilla extract until the mixture is light and fluffy.
- Gradually add the egg mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix. The batter will be thick.
- Gently fold the diced strawberries into the batter, ensuring they are evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Using a spoon or a small spatula, drop a spoonful of the cream cheese mixture onto the center of each muffin. Use a toothpick or knife to swirl the cream cheese into the batter, creating a marbled effect.
- Lightly sprinkle a little granulated sugar on top of each muffin for a caramelized finish.
- Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
