Ingredients

  • All-purpose flour – 2 cups (240 g)
  • Fresh strawberries – 1 cup, diced (about 150 g)
  • Cream cheese – 8 oz (225 g), softened
  • Granulated sugar – 3/4 cup (150 g), plus extra for topping
  • Eggs – 2 large
  • Vanilla extract – 1 teaspoon (5 ml)
  • Baking powder – 2 teaspoons (10 g)
  • Salt – 1/2 teaspoon (2 g)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a medium bowl, beat the softened cream cheese with 1/4 cup (50 g) of granulated sugar until smooth and creamy. Set aside.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  4. In another bowl, beat the eggs with the remaining 1/2 cup (100 g) of granulated sugar and vanilla extract until the mixture is light and fluffy.
  5. Gradually add the egg mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix. The batter will be thick.
  6. Gently fold the diced strawberries into the batter, ensuring they are evenly distributed.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Using a spoon or a small spatula, drop a spoonful of the cream cheese mixture onto the center of each muffin. Use a toothpick or knife to swirl the cream cheese into the batter, creating a marbled effect.
  9. Lightly sprinkle a little granulated sugar on top of each muffin for a caramelized finish.
  10. Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
