  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup (150g) fresh strawberries, diced
  • 1 tablespoon granulated sugar
  • 1 cup (100g) crushed graham crackers
  • ½ cup (90g) unsweetened coconut (optional)
  • ¼ cup (60g) melted butter
  • 1 cup (175g) white chocolate chips (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C). Melt the butter in a medium saucepan over low heat, then stir in the granulated sugar. Remove from heat and let cool slightly.
  2. Whisk in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold into the wet mixture until just combined.
  4. Pour the batter into a greased 9×13 inch baking pan. Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
  5. While cooling, toss diced strawberries with 1 tbsp sugar and let sit for 10 minutes. In another bowl, mix crushed graham crackers, optional coconut, and melted butter.
  6. Spread strawberries over cooled brownies, then sprinkle the graham cracker mixture and white chocolate chips on top.
  7. Return to oven for 10 minutes to melt the chocolate. Let cool for at least 30 minutes before slicing into squares.
