- 4 large eggs
- 1 teaspoon vanilla extract

- 1 cup (150g) fresh strawberries, diced
- 1 tablespoon granulated sugar
- 1 cup (100g) crushed graham crackers
- ½ cup (90g) unsweetened coconut (optional)
- ¼ cup (60g) melted butter
- 1 cup (175g) white chocolate chips (or dairy-free alternative)
Instructions
- Preheat your oven to 350°F (175°C). Melt the butter in a medium saucepan over low heat, then stir in the granulated sugar. Remove from heat and let cool slightly.
- Whisk in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold into the wet mixture until just combined.
- Pour the batter into a greased 9×13 inch baking pan. Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
- While cooling, toss diced strawberries with 1 tbsp sugar and let sit for 10 minutes. In another bowl, mix crushed graham crackers, optional coconut, and melted butter.
- Spread strawberries over cooled brownies, then sprinkle the graham cracker mixture and white chocolate chips on top.
- Return to oven for 10 minutes to melt the chocolate. Let cool for at least 30 minutes before slicing into squares.
