Strawberry Delight is a layered no-bake dessert featuring a buttery graham cracker crust, creamy cheesecake layers, and sweet strawberries infused with strawberry gelatin. It’s a refreshing and indulgent treat perfect for summer gatherings or any special occasion.

- 12 graham cracker sheets (about 6 1⁄2 ounces)
- 1/4 cup light brown sugar
- 6 Tbsp. salted butter, melted
- Nonstick cooking spray
- 1 1/2 cups heavy cream
- 2 (8-ounce) packages cream cheese, at room temperature
- 2 cups powdered sugar
- 2 tsp. vanilla extract
- 1 (3-ounce) package strawberry gelatin
- 1/2 cup boiling water
- 1 lb. strawberries, hulled and thinly sliced
Instructions
- In a food processor, pulse the graham crackers and brown sugar into fine crumbs. Gradually add the melted butter and pulse until the texture resembles wet sand.
- Spray a 9-by-9-inch baking dish with nonstick spray. Press the crumb mixture firmly into the bottom of the dish and freeze for at least 20 minutes.
- In a stand mixer, whip the heavy cream until stiff peaks form. Set aside in a separate bowl.
- In the same mixer bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy, about 3 minutes.
- Gently fold one-third of the whipped cream into the cream cheese mixture. Then fold in the remaining whipped cream until fully combined.
- Spread half of the cream cheese mixture evenly over the chilled crust.
- Dissolve the strawberry gelatin in 1/2 cup boiling water, stirring until fully dissolved. Allow to cool slightly.
- Add 1/3 cup of the gelatin to the remaining cream cheese mixture and blend until fully incorporated. Spread this over the first cream cheese layer.
- Toss the sliced strawberries in the remaining gelatin and spoon evenly over the top layer.
- Cover and chill the dessert in the refrigerator for at least 4 hours, or until fully set.

- Use room temperature cream cheese to avoid lumps.
- You can prepare the crust up to 2 days in advance.
