Description

Strawberry Delight is a layered no-bake dessert featuring a buttery graham cracker crust, creamy cheesecake layers, and sweet strawberries infused with strawberry gelatin. It’s a refreshing and indulgent treat perfect for summer gatherings or any special occasion.

  • 12 graham cracker sheets (about 6 1⁄2 ounces)
  • 1/4 cup light brown sugar
  • 6 Tbsp. salted butter, melted
  • Nonstick cooking spray
  • 1 1/2 cups heavy cream
  • 2 (8-ounce) packages cream cheese, at room temperature
  • 2 cups powdered sugar
  • 2 tsp. vanilla extract
  • 1 (3-ounce) package strawberry gelatin
  • 1/2 cup boiling water
  • 1 lb. strawberries, hulled and thinly sliced

Instructions

  1. In a food processor, pulse the graham crackers and brown sugar into fine crumbs. Gradually add the melted butter and pulse until the texture resembles wet sand.
  2. Spray a 9-by-9-inch baking dish with nonstick spray. Press the crumb mixture firmly into the bottom of the dish and freeze for at least 20 minutes.
  3. In a stand mixer, whip the heavy cream until stiff peaks form. Set aside in a separate bowl.
  4. In the same mixer bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy, about 3 minutes.
  5. Gently fold one-third of the whipped cream into the cream cheese mixture. Then fold in the remaining whipped cream until fully combined.
  6. Spread half of the cream cheese mixture evenly over the chilled crust.
  7. Dissolve the strawberry gelatin in 1/2 cup boiling water, stirring until fully dissolved. Allow to cool slightly.
  8. Add 1/3 cup of the gelatin to the remaining cream cheese mixture and blend until fully incorporated. Spread this over the first cream cheese layer.
  9. Toss the sliced strawberries in the remaining gelatin and spoon evenly over the top layer.
  10. Cover and chill the dessert in the refrigerator for at least 4 hours, or until fully set.

Notes

  • Chill overnight for best results and firmer layers.
  • Use room temperature cream cheese to avoid lumps.
  • You can prepare the crust up to 2 days in advance.
  • Try adding lemon zest to the strawberries for a fresh twist.
