- 1 cup flour
- 1 tsp baking powder
- 1/3 cup white sugar
- 1/2 cup fresh strawberries, chopped
- 1/4 cup milk
- 1/4 cup Greek yogurt or regular yogurt
- 1 egg
- 2 Tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1/8 cup strawberries, pureed (about 3 big strawberries)
- 2–3 cups powdered sugar
- 1 Tbsp heavy cream
Instructions
- Preheat oven to 350°F (175°C) and grease a 24-cup mini muffin tin.
- In a large bowl, whisk together flour, baking powder, and sugar.
- In another bowl, mix melted butter, milk, yogurt, egg, vanilla extract, and almond extract until combined.
- Pour wet mixture into dry ingredients and stir until just combined. Fold in chopped strawberries.
- Spoon batter into muffin cups, filling each about 1/2 to 3/4 full.
- Bake for 7–8 minutes or until tops are golden brown. Let cool slightly.
- Meanwhile, blend 1/8 cup strawberries into a puree. Mix puree with heavy cream and powdered sugar to make the glaze. Adjust sugar for desired thickness.
- Dip cooled donut holes into glaze, letting excess drip off. For thicker coating, let glaze set and dip again.
Notes
- Do not overmix the batter to keep donut holes soft.
- Swap dairy with plant-based alternatives for a vegan version.
- You can try different berries like raspberries or blueberries for variety.
