Instructions
- Wash, hull, and chop the strawberries. Set a few slices aside for garnish.
- In a small saucepan, cook chopped strawberries over medium heat until softened and juices are released, about 5–7 minutes. Cool slightly, then blend into a smooth purée.
- Place chopped chocolate in a heatproof bowl. In a separate saucepan, bring heavy cream to a gentle simmer.
- Pour the hot cream over the chocolate. Let sit for 3–5 minutes, then whisk until smooth.
- Stir in the butter, vanilla extract, and salt until fully combined.
- Gradually whisk in the strawberry purée until the ganache is glossy and uniform.
- Transfer to a bowl, cover with plastic wrap, and let cool at room temperature until thickened.

- For dairy-free: substitute with full-fat coconut milk and dairy-free butter.
