- 1 1/2 cups whipped cream (light)
- 1 cup strawberries, diced into small pieces
- 1/2 teaspoon vanilla extract
- 1/2–1 tablespoon honey (optional, to taste)
- 8 graham crackers
Instructions
- Line a casserole or baking dish with parchment paper to prevent sticking.
- In a medium bowl, combine Greek yogurt, diced strawberries, vanilla extract, and honey (if using). Mix well with a spatula to evenly incorporate.
- Gently fold in the whipped cream to keep the mixture light and airy.
- Arrange half of the graham crackers flat on the bottom of the lined dish.
- Spread the yogurt mixture evenly over the graham crackers, smoothing with a spatula.
- Top with the remaining graham crackers to form sandwiches.
- Place the dish in the freezer and freeze for 4 to 6 hours until firm.
- Remove from freezer and let sit at room temperature for a few minutes before cutting into squares or rectangles.
