Description

Strawberry Icebox Shortcake is a no-bake summer dessert layered with juicy strawberries, fluffy whipped cream, creamy cheesecake filling, and soft ladyfingers or sponge cake. It’s light, refreshing, and perfect for warm-weather occasions.

  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (12 ounces) store-bought ladyfingers or sponge cake

Instructions

  1. In a bowl, toss sliced strawberries with granulated sugar. Set aside for 30 minutes to allow juices to form.
  2. In another bowl, beat heavy whipping cream until soft peaks form. Add powdered sugar and vanilla extract, then continue beating until stiff peaks form.
  3. In a separate bowl, mix softened cream cheese until smooth. Fold in the whipped cream mixture to form a fluffy filling.
  4. In a trifle bowl or rectangular dish, layer ladyfingers at the bottom, followed by cream cheese mixture, then a layer of strawberries. Repeat until all ingredients are used, ending with a cream layer on top.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to let flavors meld and layers soften.
  6. Serve chilled using a spatula or spoon and enjoy!
