  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and powdered sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Pour the cookie dough into the prepared baking pan and spread it evenly with a spatula. Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

  9. Once the cookie bars are completely cool, spread the strawberry frosting evenly over the top.
