- 1 box vanilla cake mix (15.25 oz)
- 3 large eggs
- 1 cup water
- 1 cup lemonade concentrate (thawed)
- 1 can sweetened condensed milk (14 oz)
- 1 cup fresh strawberries (hulled and sliced)
- 1 cup whipped topping (thawed)
- 1 tablespoon lemon zest (freshly grated)
- Additional strawberries for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the vanilla cake mix, eggs, and water, mixing until smooth.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean. Allow to cool for 10 minutes.
- Poke holes all over the top of the cake using a wooden spoon handle or fork.
- In a medium bowl, mix the thawed lemonade concentrate with the sweetened condensed milk until well blended.
- Pour the lemonade mixture over the poked cake, allowing it to soak in. Cool completely, then refrigerate for at least 2 hours.
- Spread the whipped topping over the chilled cake and decorate with sliced strawberries and lemon zest.
- Slice into squares and serve chilled.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For freezing, wrap tightly in plastic wrap and aluminum foil; can be frozen for up to 2 months.
