Strawberry Oatmeal Bars are sweet, chewy squares featuring a wholesome oat base and a fresh strawberry filling. Perfect as a breakfast, snack, or light dessert, these bars are naturally sweetened and easily adaptable for various dietary needs.

- 1 cup quick or rolled oats
- 1/2 cup spelt, white, or oat flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/3 cup sugar
- 1/3 cup oil of choice
- 2 cups diced strawberries
- 1 1/2 teaspoons cornstarch or arrowroot
- 1 tablespoon sweetener of choice (or a pinch of uncut stevia)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, combine oats, flour, cinnamon, salt, baking powder, and sugar. Mix well.
- Add the oil to the dry ingredients and stir until a crumbly dough forms.
- Press about two-thirds of the dough into the bottom of the prepared pan to form the crust.
- In another bowl, mix the diced strawberries with cornstarch (or arrowroot) and the sweetener until evenly coated.
- Spread the strawberry mixture over the crust in the pan.
- Sprinkle the remaining dough over the top of the strawberries and gently press down.
- Bake for 35 minutes or until the top is golden and the center is firm.
- Cool completely on a wire rack. For best results, chill in the refrigerator for at least an hour before slicing.
Notes
- Use certified gluten-free oats and gluten-free flour to make this recipe gluten-free.
- Coconut oil or applesauce can be used for a lighter version.
- Chill the bars before slicing for cleaner cuts and firmer texture.
- Substitute strawberries with mixed berries for variation.
