Description

Strawberry Oatmeal Bars are sweet, chewy squares featuring a wholesome oat base and a fresh strawberry filling. Perfect as a breakfast, snack, or light dessert, these bars are naturally sweetened and easily adaptable for various dietary needs.


Ingredients

  • 1 cup quick or rolled oats
  • 1/2 cup spelt, white, or oat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/3 cup sugar
  • 1/3 cup oil of choice
  • 2 cups diced strawberries
  • 1 1/2 teaspoons cornstarch or arrowroot
  • 1 tablespoon sweetener of choice (or a pinch of uncut stevia)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine oats, flour, cinnamon, salt, baking powder, and sugar. Mix well.
  3. Add the oil to the dry ingredients and stir until a crumbly dough forms.
  4. Press about two-thirds of the dough into the bottom of the prepared pan to form the crust.
  5. In another bowl, mix the diced strawberries with cornstarch (or arrowroot) and the sweetener until evenly coated.
  6. Spread the strawberry mixture over the crust in the pan.
  7. Sprinkle the remaining dough over the top of the strawberries and gently press down.
  8. Bake for 35 minutes or until the top is golden and the center is firm.
  9. Cool completely on a wire rack. For best results, chill in the refrigerator for at least an hour before slicing.

Notes

  • Use certified gluten-free oats and gluten-free flour to make this recipe gluten-free.
  • Coconut oil or applesauce can be used for a lighter version.
  • Chill the bars before slicing for cleaner cuts and firmer texture.
  • Substitute strawberries with mixed berries for variation.
