- 2 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour (or gluten-free flour)
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted (or coconut oil for dairy-free)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine strawberries, peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Mix gently until well coated.
- Pour fruit mixture into a greased 9×13-inch baking dish.
- In another bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add melted butter or coconut oil and stir until crumbly.
- Evenly sprinkle the topping over the fruit mixture in the baking dish.
- Bake for 35–40 minutes, or until topping is golden brown and fruit is bubbling at the edges.
- Let cool for 10–15 minutes before serving.
