Description

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • Zest of 1 large lemon
  • 1/2 cup unsalted butter, cold and cubed
  • 3 eggs, slightly beaten
  • 4 cups fresh strawberries, halved
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 3/4 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving an overhang.
  2. In a stand mixer, combine flour, 1 1/2 cups sugar, salt, and lemon zest on low speed until blended.
  3. Add cold butter cubes; mix on low until mixture resembles coarse crumbs with pea-sized pieces.
  4. Add beaten eggs and mix until batter is crumbly and just combined.
  5. Press two-thirds of the crust mixture firmly into the bottom of the prepared pan.
  6. In a separate bowl, mix strawberries, lemon juice, cornstarch, and 3/4 cup sugar until coated.
  7. Pour strawberry mixture over the crust layer in the pan.
  8. Crumble the remaining crust mixture evenly over the strawberry layer.
  9. Bake for 45-50 minutes until crust is golden and strawberries are bubbling.
  10. Remove from oven and cool completely before cutting into bars.
