Description

  • 1 (3-ounce) package strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 1/2 cups cold heavy cream
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish with vegetable oil.
  2. Prepare the yellow cake mix according to the box instructions (typically with eggs, water, and oil), then pour the batter into the prepared dish.
  3. Bake the cake according to package directions, about 25-30 minutes. Let cool for 5 minutes.
  4. Using the handle of a wooden spoon or a skewer, poke holes all over the cake surface.
  5. In a bowl, combine strawberry gelatin with 1 cup boiling water. Stir until fully dissolved, then add 1 cup cold water. Reserve 1/4 cup of this mixture and set aside.
  6. Pour the remaining gelatin mixture evenly over the cake, letting it soak into the holes. Let cool at room temperature for 1 hour or until set.
  7. In a stand mixer, whip 1 1/2 cups cold heavy cream with 1/2 cup powdered sugar until stiff peaks form (about 3 minutes). Gradually mix in the reserved 1/4 cup gelatin and whip until peaks return.
  8. Spread the strawberry whipped cream over the cooled cake. Refrigerate until ready to serve.
