- 1 cup boiling water
- 1 cup cold water
- 1 1/2 cups cold heavy cream
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish with vegetable oil.
- Prepare the yellow cake mix according to the box instructions (typically with eggs, water, and oil), then pour the batter into the prepared dish.
- Bake the cake according to package directions, about 25-30 minutes. Let cool for 5 minutes.
- Using the handle of a wooden spoon or a skewer, poke holes all over the cake surface.
- In a bowl, combine strawberry gelatin with 1 cup boiling water. Stir until fully dissolved, then add 1 cup cold water. Reserve 1/4 cup of this mixture and set aside.
- Pour the remaining gelatin mixture evenly over the cake, letting it soak into the holes. Let cool at room temperature for 1 hour or until set.
- In a stand mixer, whip 1 1/2 cups cold heavy cream with 1/2 cup powdered sugar until stiff peaks form (about 3 minutes). Gradually mix in the reserved 1/4 cup gelatin and whip until peaks return.
- Spread the strawberry whipped cream over the cooled cake. Refrigerate until ready to serve.
