Description

Strawberry Pop-Tart Skillet Pie is a fun and nostalgic dessert that combines the fruity, sugary charm of a classic Pop-Tart with the rich, flaky texture of homemade pie. Made in a skillet and topped with a sweet vanilla glaze and optional sprinkles, this pie is both whimsical and delicious.

  • 1 1/2 cups sliced fresh strawberries
  • 1/4 cup granulated sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. fresh lemon juice
  • All-purpose flour, for surface
  • 2 batches store-bought or homemade pie dough
  • 1 cup confectioners’ sugar
  • 1 or more Tbsp. whole milk
  • 1/2 tsp. pure vanilla extract
  • 1 Tbsp. sprinkles (optional)

Instructions

  1. Preheat oven to 425°F (218°C). In a small saucepan over low heat, combine strawberries, granulated sugar, cornstarch, and lemon juice. Stir and cook for 10 minutes, until the mixture thickens.
  2. Roll out one batch of pie dough on a floured surface and press it into a 9-inch cast-iron skillet. Pour the strawberry filling over the bottom crust.
  3. Roll out the second batch of dough and lay it over the filling. Cut four slits in the top for steam to escape. Trim excess dough, fold edges over, and crimp with a fork to seal.
  4. Bake for 25–30 minutes, until the crust is golden brown. Remove from oven and let cool for 20–25 minutes.
  5. In a bowl, whisk together confectioners’ sugar, milk, and vanilla extract to make the glaze. Adjust milk for desired consistency.
  6. Drizzle glaze over warm pie. Add sprinkles if desired. Chill for 1–2 hours to set before slicing and serving.

Notes

  • Substitute strawberries with any other berries or use frozen if needed.
  • Use gluten-free pie dough for a gluten-free version.
  • For a dairy-free glaze, use almond or oat milk.
  • Arrowroot powder or all-purpose flour can replace cornstarch.
