Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix crushed pretzels, melted butter, and 1/4 cup granulated sugar. Press mixture into the bottom of a 9-inch pie dish to form a crust. Bake for 10 minutes and let cool completely.
- In another bowl, beat softened cream cheese until smooth. Add 1/2 cup sugar and vanilla extract, and mix until combined.
- In a separate bowl, whip the heavy cream to medium peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- Spread the cream cheese layer evenly over the cooled pretzel crust using a spatula.
- In a saucepan, combine 1/2 cup sugar and 1/2 cup water. Heat until sugar dissolves. Stir in cornstarch and bring to a gentle boil until slightly thickened.
- Remove from heat and stir in the strawberry Jell-O until dissolved. Let cool slightly before adding sliced strawberries. Stir to coat the berries.
- Pour the strawberry mixture over the cream cheese layer. Chill in the refrigerator for at least 2 hours before serving.
