Ingredients

  • 1/4 cup vegan protein powder
  • 1 cup sparkling water or regular water, divided
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon granulated sugar
  • 1 cup almond milk
  • 2 tablespoons coconut oil, melted, plus more for frying
  • Fresh strawberries for serving
  • Vanilla coconut yogurt for serving

Instructions

  1. In a small bowl, whisk the vegan protein powder with 1/4 cup of sparkling water until fully dissolved.
  2. In a large mixing bowl, combine the all-purpose flour, cornstarch, and granulated sugar. Whisk until well mixed.
  3. Add the protein powder mixture, remaining sparkling water, almond milk, and melted coconut oil to the dry ingredients. Whisk until the batter is smooth and lump-free.
  4. Heat a non-stick pan over medium heat and lightly coat it with melted coconut oil.
  5. Pour about 1/3 cup of the batter into the pan. Tilt and rotate the pan to spread the batter into a thin, even layer.
  6. Cook for about 2 minutes, until the edges lift and the center is set. Flip the crepe and cook for an additional 30 seconds or until light bubbles form.
  7. Remove from the pan and repeat with the remaining batter.
  8. Serve warm, filled or topped with fresh strawberries and vanilla coconut yogurt.
