Ingredients

  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, combine sliced strawberries with 2 tablespoons of granulated sugar and set aside to macerate for 15-20 minutes.
  3. In a large mixing bowl, whisk together flour, 1 cup of sugar, baking powder, and salt.
  4. In a separate bowl, beat together butter, milk, vanilla extract, and eggs until smooth, then add to dry ingredients and mix until just combined.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a wire rack.
  6. In a large bowl, beat heavy cream until thick, then gradually add powdered sugar and lemon zest until soft peaks form.
  7. Once cooled, place one cake layer on a serving plate, spread whipped cream and half of the macerated strawberries, then top with the second layer and repeat.
  8. Frost the sides with extra whipped cream for a clean finish, or leave them bare for a rustic look. Garnish with fresh strawberries if desired.
