Instructions

  4. Add the egg and vanilla extract to the butter-sugar mixture and beat until smooth.

  6. Gently fold in the diced strawberries and optional lemon zest using a spatula.
  7. Using a tablespoon or cookie scoop, drop mounds of dough onto the baking sheet, spacing them 2 inches apart.

  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
