- 1 pint vanilla ice cream
- 1 (5.25-ounce) package crispy sugar cookies
- 1 (0.8-ounce) package freeze-dried strawberries
Instructions
- Prepare Strawberry Ice Cream Mixture: Scoop strawberry ice cream into a bowl and gently stir until soft but still swirled. Fold in strawberry preserves carefully to create ribbons.
- Prepare Vanilla Ice Cream Mixture: In a separate bowl, soften and stir vanilla ice cream until spreadable.
- Layer Mixtures: In 8 popsicle molds, spoon 1 1/2 tablespoons strawberry mixture, then 1 1/2 tablespoons vanilla mixture. Alternate until molds are full. Use a knife or stick to create swirls if desired.
- Insert Sticks and Freeze: Place sticks upright and freeze for 4 to 6 hours until solid.
- Prepare Coating: Crush crispy sugar cookies and freeze-dried strawberries separately to rice-grain size, then combine in a shallow dish.
- Coat Popsicles: Run molds under warm water briefly, gently remove popsicles, and press each into the coating mixture for a crunchy finish.
- Final Freeze & Storage: Freeze coated bars for at least 30 minutes before serving. Store leftovers in an airtight container in the freezer for up to 1 week.
