Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin or cupcake tin.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture until a smooth dough forms.
- Roll dough into balls and press each into the muffin tin, forming a cup shape. Bake for 10–12 minutes or until edges are lightly golden. Let cool for 5 minutes in the pan, then transfer to a wire rack.
- While cookie cups are cooling, mix the strawberries, granulated sugar, lemon juice, and cornstarch (if using) in a bowl. Let sit for 15 minutes.
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Do not overmix.
- Fill each cooled cookie cup with strawberry filling, then top with whipped cream. Garnish with a strawberry slice or mint if desired.
- Chill assembled cookie cups for 30 minutes to 1 hour before serving.
