Description

  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice

  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin or cupcake tin.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture until a smooth dough forms.
  4. Roll dough into balls and press each into the muffin tin, forming a cup shape. Bake for 10–12 minutes or until edges are lightly golden. Let cool for 5 minutes in the pan, then transfer to a wire rack.
  5. While cookie cups are cooling, mix the strawberries, granulated sugar, lemon juice, and cornstarch (if using) in a bowl. Let sit for 15 minutes.
  6. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Do not overmix.
  7. Fill each cooled cookie cup with strawberry filling, then top with whipped cream. Garnish with a strawberry slice or mint if desired.
  8. Chill assembled cookie cups for 30 minutes to 1 hour before serving.
