  • ¼ cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • 2 cups fresh strawberries, hulled and sliced
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar in a medium bowl. Press the mixture into a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. In a saucepan, combine strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat for 5-7 minutes until softened. Let cool and puree the mixture until smooth.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract, mixing well. Add eggs one at a time, mixing slowly. Fold in sour cream and flour until fully incorporated.
  4. Pour half the cheesecake batter over the crust. Add strawberry puree and swirl with a knife. Add remaining batter and top with more puree, swirling again.
  5. Bake for 55-65 minutes until edges are set and center is slightly jiggly. Turn off the oven, crack the door open, and let it cool inside for 1 hour.
  6. Refrigerate the cheesecake for at least 4 hours or overnight before serving for best texture and flavor.
