Stuffed Chicken Salad Croissant Melts are a delightful treat that combines creamy chicken salad with flaky, buttery croissants, perfect for lunch or a light dinner.


Ingredients

  • 4 large flaky croissants
  • 2 cups shredded rotisserie chicken
  • 1/2 cup mayonnaise
  • 1/2 cup diced celery
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter (for spreading)

Instructions

  1. In a large bowl, combine the shredded rotisserie chicken, mayonnaise, diced celery, chopped green onions, salt, and black pepper. Mix well until all ingredients are evenly coated.
  2. Carefully slice each croissant in half horizontally.
  3. Spoon the chicken salad mixture onto the bottom half of each croissant.
  4. Sprinkle shredded cheddar cheese over the chicken salad in each croissant. Place the top half back on and spread butter on top.
  5. Place the filled croissants on a baking sheet and bake in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until golden brown and cheese is melted.
