Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chives, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the mini sweet peppers, cut them in half lengthwise, and remove the seeds and membranes.
  3. In a mixing bowl, combine cream cheese, garlic powder, chives, cheddar cheese, smoked paprika, salt, and black pepper. Mix until smooth.
  4. Fill each halved sweet pepper with the cream cheese mixture.
  5. Drizzle the stuffed peppers with olive oil.
