Description

Sugar Cookie Cups are a delightful fusion of sugar cookies and dessert cups, offering a sweet, buttery flavor and a melt-in-your-mouth texture. They are versatile and can be filled with various fillings like frosting, ganaches, or fruit, making them a popular treat for holidays and celebrations.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy (3-5 minutes).
  3. Add the egg and vanilla extract, beating until fully incorporated. Scrape down the sides of the bowl to mix evenly.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough and place them in the muffin tin, pressing down slightly to form cup shapes. Fill about 2/3 full.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers are soft. Let cool in the pan for 5 minutes before transferring to a wire rack.
  7. Once cooled, fill the cookie cups with frosting, chocolate mousse, fruit, or other fillings. Keep chilled until serving.

Notes

  • For gluten-free options, substitute the all-purpose flour with a gluten-free flour blend.
  • For dairy-free versions, use vegan butter or coconut oil instead of unsalted butter.
  • To make these vegan, replace the egg with unsweetened applesauce (1/4 cup) or a flax egg.
  • For a sugar-free version, use erythritol or monk fruit sweetener.
  • For additional flavor, consider adding almond extract or citrus zest (lemon or orange) to the dough.
